– 1 lb cauliflower -7 to 8 Roma tomatoes -1/2 medium white onion -2 cloves garlic -1 cup broth -1 bay leaf -salt and pepper to taste -1/2 cup vegetable oil -4 eggs -1/4 cup flour (or cornstarch)

Cut cauliflower into 1.5-2 inch pieces. Cut tomatoes and onions into large chunks.

Blend tomatoes, onion, garlic, and broth in a blender until smooth. Add to a pan and simmer gently with salt and bay leaf.

Whip egg whites on high speed in a stand mixer fitted with a whisk attachment until stiff. Reduce speed to medium and add in the yolks. Mix until incorporated.

Mix flour with salt and pepper on a plate. Coat steamed cauliflower with flour mix, then with egg.

Fry the battered cauliflower pieces in hot oil until golden brown on all sides. Drain on a paper towel-lined plate.

Add the fritters to the simmering sauce and cook for another 5 minutes, allowing the fritters to absorb some of the sauce. Divide among plates and serve warm!
