Mexican cauliflower fritters make an easy, quick meal...perfect for getting some extra vegetables into your weekly dinner rotation! This homestyle Mexican meal can be ready in just about 30 minutes!

Ingredient List

– 1 lb cauliflower -7 to 8 Roma tomatoes -1/2 medium white onion -2 cloves garlic -1 cup broth -1 bay leaf -salt and pepper to taste -1/2 cup vegetable oil -4 eggs -1/4 cup flour (or cornstarch)

Prep ingredients

Cut cauliflower into 1.5-2 inch pieces. Cut tomatoes and onions into large chunks. 

Steam cauliflower

Steam cauliflower until fork tender, about 11 minutes.

Make sauce

Blend tomatoes, onion, garlic, and broth in a blender until smooth. Add to a pan and simmer gently with salt and bay leaf. 

Whip eggs

Whip egg whites on high speed in a stand mixer fitted with a whisk attachment until stiff. Reduce speed to medium and add in the yolks. Mix until incorporated.

Batter cauliflower

Mix flour with salt and pepper on a plate. Coat steamed cauliflower with flour mix, then with egg. 

Fry cauliflower pieces

Fry the battered cauliflower pieces in hot oil until golden brown on all sides. Drain on a paper towel-lined plate.

Add fritters to sauce

Add the fritters to the simmering sauce and cook for another 5 minutes, allowing the fritters to absorb some of the sauce. Divide among plates and serve warm!
