Mexican white rice is the perfect side dish to all of your favorite Mexican main meals. This dish uses common ingredients and pantry staples, and is sure to please even the pickiest eaters.

1 cup long-grain white rice 1/4 cup vegetable oil 1/4 medium white onion 1 clove garlic 3 cups chicken broth 1 cup mixed, diced vegetables (optional) Salt to taste

Gather ingredients and soak rice


Gather ingredients and soak rice in warm water. Drain rice and rinse until water runs clear. Set aside to dry. 

Heat oil and fry rice, garlic and onion


Add broth gradually


Add 1/2 of the broth and allow to simmer. Add in remaining broth, vegetables, and salt. 

Steam covered


Once the liquid is mostly absorbed, cover the pot and steam for the last 5 minutes.

Serve with your favorite Mexican meals!
