For the fajitas – 1 lb boneless, skinless chicken breast -1/2 large red onion (thinly sliced) -2 large bell peppers (thinly sliced) -3 tbsp vegetable oil -Squeeze of lime juice For the rub –1/2 tsp dried cumin -1 tsp dried oregano -1/2 tsp garlic powder -1/4 tsp cayenne pepper -1/4 tsp paprika -1/4 tsp ground black pepper -1 tsp salt
Mix the rub ingredients together in a small bowl. Rub on both sides of chicken breast to season.
In a pan over medium high heat, heat 2 tbsp of oil and cook chicken until internal temperature reaches 165F.
Remove chicken from pan and add in remaining oil. Cook veggies until softened and slightly golden.
Cut cooked chicken breasts into strips.
Put chicken strips into the pan with the veggies and stir everything together. Finish with a squeeze of lime juice!
