3 cups dried Peruvian beans 6 cups water + more for cooking 1/4 white onion Salt to taste
Soak beans in water overnight.
Place beans in a pot, add in onion, and ensure beans are covered with at least 1-inch of water.
Add water as necessary and stir occasionally while beans simmer. Add salt once beans are soft.
Serve on the side of your favorite Mexican dishes, or use in place of black or pinto beans.
