– 1 cup vegetable oil, divided – 2-3 cloves garlic – 6 large chile pasilla (chile negro), stems removed – Salt to taste

Fry the garlic in the hot oil until just slightly golden. Remove from oil and place in a blender.

Fry chiles one at a time in hot oil for 5-10 seconds per side. Place in blender.

Add oil from frying pan to blender and let cool. Add salt to taste and blend on high, streaming additional oil into blender to create a smooth sauce.
