This saucy Mexican shredded chicken is perfect for tacos, burritos, nachos, tostadas, tamales, or just about any Mexican-inspired meal!

Ingredient List

- 10 pasilla chiles – 5 cups chicken broth – 1/4 white onion – 2 cloves garlic – 1 tbsp whole peppercorns – 1 tbsp whole cumin – 1.5 tbsp dried oregano – 2 tbsp vegetable oil – 3 bay leaves – Salt to taste – 4 cups shredded chicken

Gather ingredients 


Gather ingredients and start heating chicken broth. 

Toast and clean chiles


Toast chiles 1 by 1 in a dry skillet for 15 seconds per side. Remove stems, seeds, and veins from chiles.

Soak chiles


Place cleaned chiles in a bowl and cover with warm chicken broth. 

Blend sauce ingredients


Place chiles, soaking broth, onion, garlic, cumin, oregano in a blender. Blend until smooth.

Strain sauce into skillet


Strain blended sauce through fine-meshed sieve into skillet. 

Cook sauce and add chicken


Simmer sauce with bay leaves and salt. Add shredded chicken and heat through.
