How to Make Mexican Amaranth Fritters

Ingredients

-1/2 cup + 2 tbsp vegetable oil -1/2 medium white onion, chopped -1 bunch fresh epazote leaves, chopped (about 1 cup packed) -3 1/4 cup puffed amaranth -3 eggs, whites and yolks separated -Salt to taste

#1 Gather Ingredients

Puffed amaranth and epazote can be purchased online if you can't find these in your local grocery store! You can substitute dried epazote leaves for fresh. 

#2 Make dry mix

Fry chopped onion. Add fried onion to a bowl along with amaranth, salt, and chopped epazote. Mix together. 

First, whip egg whites until stiff. Once egg whites are stiff, add in the yolks and mix together. 

#3 Whip Eggs

Mix whipped eggs with the amaranth mixture

#4 Add eggs to amaranth 

Heat vegetable oil in a non-stick skillet. Scoop a bit of the amaranth mixture into the hot oil and fry on both sides. Let fritters drain on a paper towel-lined plate. 

#5 Fry fritters!

Serve with a side of salsa, warm corn tortillas, black beans, salad, or rice!
