– ~2 lbs tomatillos ~950g – 2 cloves garlic – 3 serrano peppers (chiles) – 1 medium white onion – 3 tbsp vegetable oil – 3 cups shredded chicken – Salt to taste – 2 lbs masa for tamales, ~1 kg, – 1 1/4 cup lard – 2/3 cup chicken broth, – 1 teaspoon baking powder – ~15 dried corn husks for tamales

Boil tomatillos, chile serranos, onions, and garlic. Blend vegetables until smooth.

Fry blended salsa in vegetable oil. Taste for salt. Add in shredded chicken.

Beat lard in a standing mixer. Add in baking powder and salt. Gradually add masa, alternating with chicken broth.

Spread prepared masa into a corn husk. Top with a bit of the salsa and chicken mixture.

Fold the sides of the corn husks into the center of the tamal and the pointed end over the folded center seam.

Remove tamales from the steamer basket, carefully open the corn husk packet and enjoy warm!
