Is fall in full swing where you live? Down here in Mexico, the rains have finally stopped. The Halloween and Día de Los Muertos decorations are up. And the crisp, chilly nights make me crave comfort in a belly-warming bowl of stew or saucy and spicy Mexican dishes.

These are some of our favorite Mexican dishes, perfect for warming you up on those chilly fall days! Whether you are looking for spicy, vegetarian, or family-friendly, there is sure to be something on this list for you!

Mexican Meatballs (Albondigas)

Mexican-style meatballs are pure comfort food! Rolled balls of ground beef, simmer in a tomato-based sauce for a meal that is ready in 35 minutes making it one of my go-to easy weeknight dinners! This recipe has several variations so that you can prepare something with what you have on hand, and that your whole family will enjoy. Accompany with black beans or authentic Mexican red rice for a complete meal.
Clemole (Mole de Olla)

Clemole is a hearty Mexican-style beef and vegetable stew, cooked low and slow, perfect for a lazy, chilly day. Made with beef shank steaks, the marrow from the bone melts into the soup making a restorative and flavorful broth. Plus, the addition of fresh vegetables makes this stew ultra filling!
Mexican Lentil Soup

Mexican Lentil Soup (sopa de lentejas) is a family favorite! Even with just a few, simple ingredients, this soup has big flavor! I love to use a bit of bacon to flavor this soup, but you can easily omit the bacon to make this comforting soup vegan! Try this soup with one of our favorite tacos: tacos dorados de papa (potato taquitos).
Mole Verde

Mole verde with chicken is, comforting and aromatic. This is the perfect beginner mole and comes together much faster than a traditional mole poblano. Serve this mole over whole pieces of chicken thighs or shred the chicken meat to make tacos! Serve with a side of Mexican white rice for a complete meal!
Mexican Noodle Soup (Sopa de Fideo)

Warm, comforting, and generally heart-pleasing, traditional Mexican noodle soup is a classic dish that is served all over Mexico as part of the afternoon meal. This is a favorite soup with our family, especially the kids! To make this a complete meal, whip up a batch of quesadillas, like these oyster mushroom quesadillas, to serve alongside!
Chile Relleno with Cheese

It really doesn’t get any better than roasted poblano peppers stuffed with melty cheese. Chiles rellenos are traditionally served in a light tomato sauce to make a warm and comforting meal.
Easy Mexican Picadillo

Easy Mexican picadillo is one of my favorite one-pot meals! This dish is packed with authentic Mexican flavors, but is not overly spicy, making it family-friendly. Ground beef simmers in a tomato broth with mixed vegetables. We love to eat this picadillo served on tostadas, and topped with Mexican crema, shredded Mexican cheese, and a fresh homemade salsa (like this salsa verde). And the best part? This dish can be on your table in just 35 minutes!
Chilaquiles with Charred Salsa Roja

Who says you can’t have breakfast for dinner? Fried tortilla wedges are smothered in a spicy, charred tomato salsa to create a deliciously comforting meal, perfect for any time of day. What I love about chilaquiles is that they are totally customizable.
Add a fried egg, shredded chicken, or grilled steak on top for a heartier meal.
For a lighter version, top with Mexican cream (or sour cream), shredded cheese, and a bit of thinly sliced onion.
Leave out the animal products and add avocado and beans instead for a vegan version. Not feeling the red salsa? Try our chilaquiles with roasted salsa verde version instead. There are so many different ways to enjoy chilaquiles! Which way is your favorite?
Tortilla Soup

Tortilla soup has a warm, silky tomato and chile-based broth, and is customized with traditional add-ins like fried tortilla strips (a must-have!), cubes of panela cheese, Mexican cream, avocado, and fried strips of pasilla chiles. This version can be made vegan by substituting the chicken broth for vegetable broth and leaving out the cream and cheese. For a more hearty meal, you could make a chicken tortilla soup by adding shredded chicken!
Enchiladas Suizas

These easy chicken enchiladas are smothered with creamy tomatillo salsa, topped with cheese, and broiled in the oven until the cheese is melted and bubbly. These spicy enchiladas are sure to become one of your favorites! If you need a milder version of enchiladas, try these enfrijoladas. These pair perfectly with a side of refried beans!
Chiles en Nogadas

Roasted poblano peppers, stuffed with a meat and fruit filling is a traditional dish eaten at this time of year here in Mexico! Because the colors of this plate represent the colors of the Mexican flag, this dish is often served right around Mexican Independence Day on September 16th! There are many different variations of this dish from the type of meat, fruit, and even the sauce. What I love about this version is the filling comes together quickly and has just the right blend of sweet and savory flavors.
Tamales Verdes with Chicken

Corn husks are filled with corn dough (masa), shredded chicken, and a spicy green salsa for this portable and traditional Mexican food! Tamales usually mark a special occasion here in Mexico and are often served during Día de Muertos, Christmas, or during Mexican Independence Day! The easy salsa verde is just spicy enough to give these tamales a nice kick!
Mexican Street Corn (Esquites)

Fall is the time here in central Mexico when corn is harvested. I love to take advantage of all of the corn varieties available at the market to make this easy Mexican street corn (called esquites). Cooked corn kernels are mixed with lime juice, mayonnaise, shredded cotija cheese or queso cincho, and a sprinkle of chile powder. Esquites can be found at street stands throughout Mexico City and the surrounding areas, usually served as a quick snack! But these also make a perfect side dish to carne asada or any one of your other favorite Mexican dishes!
Saucy Mexican Shredded Chicken

This is one of our favorite weeknight meals…or any time meal really! Why? Because this saucy, flavorful shredded chicken is downright addicting! Shredded chicken simmers in a chile pasilla based sauce. Whole cumin and peppercorns give this dish even more flavor! One of the things I love about this dish is it is so versatile…use it to top tortilla chips for the ultimate plate of nachos or as the protein portion in Mexican rice bowls. This chicken is also perfect for burritos, quesadillas, tacos, tostadas, and tamales!
